Authentic Mexican Anchos are the dried version of the Poblano Pepper. Properly dried Ancho Chilis have a deep dark red color and wrinkled skin. The chilies can be used whole and can be rehydrated by soaking them in hot water for a couple of minutes. They can also be grounded into powder and can be used in spice rubs, mole, enchiladas, sauces and Texas Style Chili. In its dried form, chili peppers can last for months in a dry, cool place.

How to use Dried Ancho Chiles?
Poblanos are dried into Ancho Chile Peppers and can, therefore, be stored and used for a longer period of time. Ancho Chiles can be used in two ways. One of the most common ways of using Ancho Chile Peppers is by soaking them in hot water, usually for about 30 minutes to restore them. Alternatively, they can be ground and directly used in cooking. Using them pureed evenly distributes their flavor in the dish. When properly stored under airtight conditions or in a freezer, they can last up to a year long.
How to rehydrate Ancho Chiles?
Re-hydrating your chiles is easy! Just follow these easy steps:
- Scoop out the insides of the dried chiles with a knife. You can do this step after they are rehydrated and then set them aside.
- Heat a large pan to medium-high heat and dry roast the peppers about 30-60 seconds per side. They will become slightly puffy, but this step is optional.
- Grab your peppers and pour the boiling water over the chiles then afterwards cover them and allow to sit 15-30 minutes, depending on the thickness of your peppers.
- Remove from water and use as needed.
