One of the most common ways of using Ancho Chile Peppers is by soaking them in hot water, usually for about 30 minutes to restore them. Alternatively, they can be ground and directly used in cooking. Using them pureed evenly distributes their flavor in the dish. When properly stored under airtight conditions or in a freezer, they can last up to a year long.

How to use Dried Guajillo Chiles?
Before use, Guajillo chile peppers are seeded. They are then soaked and then pulverized to make them into a thin paste. From there, they are cooked with other ingredients to create a sauce. The peppers can also be used in pastes, rubs and butters when being used to flavor meats.
How to use Dried Pasilla Peppers?
These peppers are often sold whole or powdered. If using the chili as a whole, you need to roast them first before you can incorporate them into your dishes. Once the peppers are roasted, remove the seeds and veins and soak in hot water for about 5 minutes. Remove the peppers in water and leave them to dry. Once dry, you can stuff them with grated cheese or your favorite shredded meat. If preparing sauce, simply toast the chile peppers. If making sauce using powdered Pasilla peppers, stir in flour and chili powder in heated oil before adding other ingredients.
